For the stable tokens, each token in the circulation will be backed by a Dollar/Euro/ Dirham so it will keep its value, for example, 1 USDV will always have a value of 1 US $.
For the transaction speed, Sarf will have the same protocol as Stellar, so it will be able to handle up to 2000tx/s so a transaction is done almost instantly.
