I am looking for the most reliable way to cash out digital assets as I never been trading before.
The most important for me is a secured way to withdraw crypto without passport scan or some other data requirements which are stored and can be stolen or used then.
I'm not interested in decentralized exchanges that collect information as they have no good reputation.
What's the process of converting to fiat and how can I be sure that transfer is secured?

In every country have different step to withdraw your assets to be cash money, I recommended to you to put your place or country on your thread, so that will make you'll get the best answer for your question.
If in my country, Indonesia, I'm using Indodax's account to withdraw my assets, there I should complete my ID and put my card's numbers, after that I'm withdraw my assets into IDR and about 1 hour the money received to my ATM card. So easy and safe because that using Google authenticator and phone number verification when we want to withdraw my assets. I'm really happy with the service which really fast and friendly.

In my opinion, surely in every country have different regulatory steps for how to withdraw assets into cash, so I recommend you to place your place or country, so you get the best answers to your questions. because in my country, Indonesia, I use an Indodax account to withdraw my assets, there I have to complete my ID and enter my card number, after that I withdraw assets into IDR and about a few minutes the money is received to my ATM, so it's very easy and it's safe to use Google authentication and phone number verification when I want to withdraw my assets. And I feel very happy with the service that is very fast and also very friendly.

You can try medium exchanges like Coin Exchange and Mercatox. KYC is not mandatory but just be careful, sometimes they go through a lot of maintenance and they prevent you from making a withdrawal to your personal wallet.

Some of the exchanges - DEX's - are allowing people to withdraw money from their bank accounts. But all of them would want you to KYC.
Other than that you may want to look for OTC trade with fiat. This would be harder but eventually, you can find some people to trade with fiat.

I can give you an example. There are no documents required. Almost all coins are sold on the IDEX exchange, so you need to start transferring coins to this exchange. And then go to the BestChange website and select the appropriate exchanger.

Most of the known exchanges will require you to undergo KYC if you will going to convert your crypto into fiat. I think that's the requirements from the government where those exchanges being registered.
If you don't want to undergo KYC process then find a legit buyer in this forum or other crypto sites that will pay you in paypal. You can find buyers in your local area that will be transacted in P2P selling platform. Just Google localbitcoins.

When i need a cash out - i just buy a TrueUSD and exchange with a real person in real life.

Well...until recently IDEX were one of them. but it's administration decided to reveal it's users and accepted KYC system. Still this moment I also cant find the suitable one.

This can depend on where your assets are listed. In some exchanges, you don't need to go through the process of kyc before making withdrawal, except your withdrawal is greater than 2btc or more.
Converting your crypto currency to fiat is quite simple, and at same time depends on your countries policy. You can also try a simple p2p site which (for me) has made my withdrawals very simple and easy, i.e localbitcoins.com

Well...until recently IDEX were one of them. but it's administration decided to reveal it's users and accepted KYC system. Still this moment I also cant find the suitable one.
IDEX was the most popular and most reliable.

This can depend on where your assets are listed. In some exchanges, you don't need to go through the process of kyc before making withdrawal, except your withdrawal is greater than 2btc or more.
Converting your crypto currency to fiat is quite simple, and at same time depends on your countries policy. You can also try a simple p2p site which (for me) has made my withdrawals very simple and easy, i.e localbitcoins.com

Oh man, so many of them, it all about ratings and reviews on bestchange
If you see rating something like 1488/0 - this is good rating and great exchange, something like 132/22 probably not good
Also, you can meet with people and exchange with them in real life
I don't want to make such exchange process with real people.

some bank accounts supports cryptocurrency depending on the country. applications from google playstore which is recognized by authorize institutions can be helpful as well but the problem there is it is "centralized"

Please stop speaking rubbish. Please tell m how fork delta and idex have "very" weak security. You never deposit into another wallet and your funds ate in your wallet all the time. You own the coins the entire time since its directly wallet to wallet transactions. Unlike centralized exchanges where you deposit first. Idex and fork delta ate safer the your silly centralized exchanges. Dont spread misinformation, please.
