Even I don't use a demo account in trading, so it's good if we do a trading activity that we have an idea of here; we can't just be willing to take a risk here.

I was just about to say this. A demo account has its own perks but when it comes to learning, a demo account should not be your first choice. But if you are doing well after learning how to trade, you can use a demo account to your advantage. Just as you have mentioned, trying out a new strategy. If you are unsure about a strategy whether will work or not, you can choose to try it out in a demo account to find out all the errors. Then by solving those mistakes, you can create a good strategy.

It could be something you came up with on your own or some new strategy that you have come across and you want to know how affective it is.
Except for this, I don't see much useful use of a Demo account. As I mentioned, there are other useful ways you can use it but this is the most effective one. But learning to trade using a demo account is never a good choice.

If you want to learn it, use real money to feel the real emotions and act on them accordingly. When it has no risks involved, it will not being out the true feelings at all.

While still on demo, if a trader can not learn to control their emotions, how to set stop loss and take profit and how to make a wise financial management decision while alocating money for their entry position, they will always face those issues in real trade too. If you perform well in demo, you have a high chance to perform well in real trade too because you are just dealing with same market volatility and asset liquidation.
