Why should vendor not choose a stable coin over bch or Btc

As in the title
       from vendors point of  view might not be the   best idea due to volatility
                                      Volatility pointed out as a potential flaw in the whole idea of payments with cryptocurrency

        Stable coin as circle coin or Gemini dolar could be a better alternative 
Thus bitcoin as method of payment  ? Hmmmm ?
