Should we sell Bounty rewards?

It totally depends on the project. Price could dump even project is very good because of its high bounty reward pools. Many hunters will sell their tokens right after they got them. So in that case sell then buy in the dip is a good option though.

Everyday new projects or bounty keeps popping out of no where, but as you said only a few of them them are worth while, some bounties eventually turn out to be a scam and they end up not paying their bounty hunters which is bad, for me the decision to hold or sell the reward gotten from bounty totally depends on the bounty hunter, if he/her feels like the project would do exceedingly well in the future then holding will be the best option, but if the project doesn't look like it can survive for long and might end up becoming a shitcoin then dumping it will be the right option.

It is not necessary to sell the bounty rewards immediately after ending of the campaign. If you see a good future of a project then hold it and if you see a average or below average project then you can sell it immediately. It is totally depends on you.

Selling reward of bounty or not is the decision of the hunter, I don't think we need anyone to decide for us if we should sell our bounty reward or not. This is a reward you have worked for as a bounty hunter, so I think you have 100% right to decide if you are selling or holding.
