Gold is used as a store of value by those with "older" mentality: low volatility, usually rising. Read article on Bricta.com
Bitcoin is used by those with some more appetite for risk and more tech savvy.

In time Bitcoin will become more stable. In time the older people will... leave room to others, which may at least be more tech savvy.
Now there's a demand for both. In time the balance will probably shift more and more towards Bitcoin.

In my opinion, Coinbase is the best exchange to start with as a newbie. You also may want to start with a few simple market orders on Coinbase first before going into the trading screens on Coinbase Pro. You could also consider Binance, but I don't find it as easy to use as Coinbase, although trading fees are cheaper. For staking I iuse bring.finance
