Why does coins prices fluctuate so much and it is never been constant making predicting price much harder and much riskier and holding on to coins can be the best way right now.

because of the supply and demand the price can swing in any direction. If many people will sell their bitcoin then the market will takes time before it will absorb or taken by other investors. Then, the price of bitcoin will fall down until such time that more people will buy bitcoin to reverse the trend. Price fluctuation is normal in a volatile market as many transactions being created every minute.

My guess is that their prices are dependant on the intensity of demand and supply in the markets.
