Bitcoin is a digital currency because it has the same function as money. Bitoin can be used as payment for goods or to hire employees in a company. That's why bitcoin is often referred to as electronic money.

I  think we base this in turn on the assumption that for something to be used as a store of value it needs to have some intrinsic value, and if bitcoin does not achieve success as a medium of exchange, it will have no practical utility and thus no intrinsic value and won't be appealing as a store of value.

According to me Bitcoin is money that is intangible.
Bitcoin does not have physical forms such as gold and USD in the form of paper money.

But Bitcoin is only a set of letters and numbers that have currency values.

Bitcoin is indeed called money. but the designation is only for Crypto which can be called digital money like Bitcoin. I think the main purpose of forming Bitcoin is to replace real money or fiat money used by the world community to become Bitcoin digital money. That's the most wanted by Bitcoin to date.

For me bitcoin is money as long as you are able to use it to purchase goods and services. The volatility of cryptocurrencies is the one thing that is keeping general adoption away and allowing people with the fiat printers to badmouth crypto currencies.
As soon as volatility decreases (if it will decrease) we can expect a much wider adoption
