Since owning the hardware, I have only done one update the rest until now I no longer do updates, I only check the balance and then close back and ignore updates, so is it still safe or keep updating?
You should update firmware for sure, Trezor developers fixed important security issues and made significant improvements and changes during last few years.
There is also a chance that running old firmware could result in error with transactions, but if you are not using device than it doesn't matter, since you should keep seed words separately offline.
That's what I'm afraid of with transaction errors so it's better to update the firmware as you suggested to be even safer, but so far using Trezor is only one 1x transaction and the rest is no longer while for the seed phrase it stores offiline in a safe place.

Firmware updates are usually needed to add new features, fix bugs, or increase the security of the hardware wallet device.
The changelog of the firmware can be a reference to see whether it is urgent to install immediately or can still be skipped, for example, because it is only a minor bug fix.

I do not use hardware wallets, for now I don't have that many coins and it just seems too hard. I am so used to having everything online but if I ever get a bigger portfolio I might consider getting it!

I always thought that I would never need a hardware wallet until i lost some coins, someone moved all my Bitcoin and altcoins out of my wallet, this is a old wallet thay I have been using since 2019, and it is always online.

So one day I decided to order a Keystone hardware wallet, since then I have never gotten compromised again, now I understand the difference between a air-gapped hardware wallet and a normal crypto wallet.

Keystone 3 pro is a good one.
