if you are french but live in spain, the state looks for you and forces you to pay taxes

why aren't they so eager to ask for taxes from google, amazon, ebay, microsoft who only pay a fucking 3%?

Well, there are international tax treaties among countries and citizenship also plays a role in it. Depending on what was agreed upon, these laws are set to prevent double taxation for one individual. It would be possible that if you earn from working in Spain, the Spanish and the French Government could create a new agreement that you don't need to pay in Spain but you'll be required to report your income to the French Government. That sounds ridiculous but it's just an example of a treaty between States.

Unless that country can obtain some tax money from the other country, I do not think this will happen, and since the matter is complicated, the tax associated with the location is much easier.
In general, taxes are a hot topic for governments, and they rarely try to provoke the middle class by allowing legislation with taxes exceeding 30%. In my country, there is no income tax, but there are taxes on goods and services of about 15%.

I don't think there is a way a country will make demands on tax payment without considering the other business establishments existing in the country as well, we may not be aware of them or the rate at which they were being taxed as long as they were found within the scope of the country and not on just a random platform which has no representation in the country, task is part of the means the governments make money and we shouldn't see it on people as a means for an attack.
