Many do as you say, but there are also those who change it first to Fiat, to make it easier to do payment activities by not using Bitcoin. But there are also those who also use bitcoin for direct payments if there is no prohibition at the same time and everything can be done as well.

Holding your Bitcoin for that long means there are other sources of income, or the only source of income is enough to cater for your need for that lengthy period of time. To be honest, discipline is never enough. When you are tempted to sell, just to satisfy your basic nee ds, you will have to do that at some point. But it is also important that we don't get too comfortable when it comes to spending our investment, otherwise, we end up spending everything in a matter of time. so imo, our level of accumulation will guide us how will spend from our portfolio. Spending from a $1k investment should be different from spending from a $10K investment.
